April 2022 New Life Spiritually and Physically

 

Happy Easter!


April is my favorite month of the year next to December.  It always starts with the Semi-Annual General Conference of The Church of Jesus Christ of Latter-day Saints.  It is a time of renewal of the Spirit after the dark days of Winter.  It is my time to be in the quiet of my home and listen to 10 hours of instruction, council, wisdom, knowledge, comfort and peace from the leaders of our Church.  My heart is full of gratitude for the healing balm of the Gospel of Jesus Christ.  It helps me be a better servant, wife, mother, grandmother, sister, friend and neighbor.  

President Russell M. Nelson gave us 5 actions to maintain Positive Spiritual Momentum:

1.  Get on the Covenant Path and Stay There.

2.  Discover the Joy of Daily Repentance.

3.  Learn about God, and How He Works.

4,  Seek and Expect Miracles.

5.  End Conflict in your Personal Life.

We have our instructions for the next 6 months and I look forward to the journey.  I had the opportunity of teaching the Adult Sunday School class on Easter Sunday.  We talked about the Manna that was given to the Israelites as they were wandering in the desert.  Exodus is very specific to them on the daily ritual of collecting only what they could eat and obtaining a double portion on the 6th day so as to rest from their labors on the Sabbath.  We too, need the daily "Manna" in our lives as a remembrance of He who provides all for us, even Jesus Christ.  We obtain that nourishment through Prayer and Scripture study daily.  We then had a sharing of experiences of how the Atonement of Jesus Christ blesses us with peace and joy and how we can help others who may be struggling to find peace and joy.  It was a beautiful experience for all.  

"Yea, come unto Christ and be perfected in him, and deny yourselves of all ungodliness; and if ye shall deny yourselves of all ungodliness, and love God with all your might, mind and strength, then is his grace sufficient for you, that by his grace ye may be perfect in Christ; and if by the grace of God ye are perfect in Christ, ye can in nowise deny the power of God.

And again, if ye by the grace of God are perfect in Christ, and deny not his power, then are ye sanctified in Christ by the grace of God, through the shedding of the blood of Christ, which is in the covenant of the Father unto the remission of your sins, that ye become holy, without spot."  Moroni 10:32-33

Easter Bunny Visit


Russ and I worked really hard all week clearing out all of the Winter debris and getting the back yard ready for Easter and Summer.  We hauled 5 loads to the dump filled with leaves, vine, dead trees and accumulated things.  We can now see the back fence and gazebo and more daylight.  We found more rock walls and cleared off the rock path.  

I love to decorate and surround myself with all things Spring.  It is time to take down and look forward to July decorations.  Time is going so fast - where did April go.  We have had much needed snow and rain this month  - the garden is calling - we will see what May brings.


Easter Dinner was a Feast!  We were going to have a quiet dinner with just Emily and Ian.  On Saturday afternoon Ian's family called and asked if they could come for dinner.  We ended up having 11 adults and 6 kids.  I just had to make a little more and we had a wonderful time.  I prefer cooking for a crowd on special days than just for a few - the effort is about the same with the added benefit of good company.  
We had Chicken Bundles with sweet potatoes, stuffing, holiday potatoes, creamed peas, salad, Lemon meringue and Chocolate Nutella cream pies.
It was unanimous that it was better than Thanksgiving and they want the same menu for Thanksgiving!



THE LAMB OF GOD CONCERT BY ROB GARDNER
Russ, my sister Pam and I had an evening out to the Eccles Theatre in Salt Lake City.  "Embrace the hope of Easter and experience the power of the last week of Christ's mortal ministry as told through the musical event, Lamb of God.  It is a concert oratorio that has been compared to Handel's Messiah and Mozart's Requiem.  
It was one of the most beautiful performances I have ever been to.  The musical was magical and so moving.  At the Death and Resurrection of Jesus Christ I felt like I was in Heaven because of the grandeur of the choir.  I hope this becomes an Easter tradition for us.




I participated in a Rowing Challenge the week before Easter and pushed myself to do the final 5,000m.  It felt good rowing again but boy did my body feel it!  It was a 5 day event starting with 100m, 500m, 1000m, 2000m, and then 5,000m. I am a real novice but had a few personal bests.  I just need to keep it up.  Russ Rows about 4,000m per day.  


SPRING also means BYU Softball and baseball.  We went to a softball game and had a fun time.  It was even nicer that they won!







SPRING SPORTS FOR THE GRANDKIDS keep us busy.  Logan swims with Special Olympics.  It is neat to watch those special athletes try so hard and accomplish so much.

HOME PROJECTS 

Last March we contracted with a contractor to have a Walk Out put in for our home.  It was a very slow process and in November the cement work was poured.  The cold weather set in and the finishing work would need to wait until Spring.  I started contacting the Contractor in February to get on his calendar to come and finish.  The first pictures show what the walls looked like when they finished.  Multi-colors and many imperfections in the cement pour.  The Contractor said he was done.  He finally agreed he would come back in the Spring and resurface the walls.  We purchased all of the supplies for him.  He said he would come around March 15.  We waited and waited.  We finally decided to watch some How-to Videos and do it ourselves.  

Russ mixed the cement plaster and I applied it to the walls.  It took my about 6 hours but we got it done.  I could hardly move that night.  We are really pleased with how it turned out.  We just have to add the Handrail and it will be DONE!  Just need to add the flowers and some landscaping - always more to do as the seasons come and go.  







MEMORIAL MEMORIES

April 27 was the 5 year anniversary of my mothers passing.  Oh how I love the setting at the cemetery at the base of the beautiful Wasatch Mountains.  Russ, my sister Pam and I spent a few hours cleaning up the area and placing some fun "flowers" and things.  We enjoyed just being together and reminiscing about our parents and grandparents.  Pam is nine years older than me and it is always fun to hear her stories from the "early" years of the family.  We laughed and we cried and then rejoiced at how grateful we are to be a part of this family with the
Knowledge that FAMILIES ARE FOREVER and we will be reunited together again.  
So grateful for this month of April and the celebration of Easter that brings us the gift of the Atonement of Jesus Christ and His Resurrection that makes it all possible for us to have this knowledge and hope.  "It is not about the bunny - it is about The Lamb". 
I know that my Redeemer Lives, What comfort that sweet sentence gives.

March 2022 - Family, friends, funerals, reunions, parties and Life

 


Winter is still going strong as we enter the Month of March.  There is nothing more beautiful than the sun setting on a snow covered mountain.  I continue to "Stand All Amazed" at the beauty of this amazing earth created by God.  

We had a quick visit from Spencer Duce - it is always fun to be with these young people who mean so much to us from our mission.  He currently is living in Idaho Falls, ID.   He came to visit on his way to a wedding in Kansas City and then on to see his family in Minnesota.  We drove him to the airport so he could keep his car at our house and save some money.

I continue to volunteer as the school lunch cook three days a week.  Taco Tuesdays are a favorite but very labor intensive.  We decided to start making taco casserole and it is so much easier to make and serve.  
An 8 year old young man was baptized this month in our Ward and his mother was looking for a place to order cinnamon rolls.  I responded to the request that if her other options fell through I would be glad to make them as a gift to their family.  She responded quickly that the other options were very expensive and she would be grateful for me to make them.  Some habits are hard to break - I hear cinnamon rolls and I am on it, especially when I give all of them away and don't eat any.


Reclette Meal
Cooper and Elli - friends from the mission, came for dinner and we had reclette.  Elli is from Freiburg Germany and lives in the German House at BYU.  It was a fun evening of memories from Germany and our favorite foods.  Cooper left for Army Boot Camp at Fort Leonard Wood in Missouri the following Tuesday.  He will be gone for 3 months and we wanted to send him off with good memories and our love.  
Saint Patrick's Day Dinner of Corned Beef, cabbage, potatoes, carrots, sauerkraut and salad.  The Insta Pot is the secret to delicious, tender corned beef.  It is always fun to celebrate the Irish blood in me and share stories of my Irish ancestors.  
I was asked to serve on the committee for our Stake Women's Conference.  I was given the menu that the committee wanted and then I began to create the food and how we would serve it.  My daughter, Emily decorated the food area and helped me in planning the presentation.  It was beautiful and the food turned out really good.  We served 200 women chicken salad on croissants, relish tray, fruit bowl, BYU Mint Brownies and Homemade granola bars for those who needed gluten free.  Recipes below:

The speaker for the event was Lilly de Hoyos Anderson - check out her podcasts.  She was Wonderful!
The theme of the Conference was taken from Ezekiel 11:20. He was the last Prophet in Israel before Captivity.  He was a contemporary of Lehi and Jeremiah .  
"That they may walk in my statutes, and keep mine ordinances and do them:  and they shall be my people, and I will be their God."

TO BE HIS PEOPLE
When the Lord has a Zion people - He will come again.  Will I be ready as a Zion People?  We need to be ready for Him to come.  
ZION:  One Heart, One Mind, No Poor among them, people, saints, baptized, received Holy Ghost, those who keep covenants, those who keep commandments, righteous - The Pure in Heart.

*Zion is never in danger - it alone offers safety to the world.
*Babylon is in all things, the counterpart of Zion - the opposite of Zion.  Go ye out of Babylon.

It was so rewarding serving on this committee with women who serve and give their all to the Women in our congregations.  

We have been to 4 funerals in the past few months. We had two this month.  McKay Sorenson, the 31 year old son of a family childhood friend who passed away from Cancer after a two year courageous battle. It was a beautiful celebration of his journey in the time he was given on the earth.

On a beautiful Winter day we gathered as a family in Burley Idaho to lay to rest the 7 month old daughter of my niece.  Gracyn Ruth Searle was born with Othtahara Syndrome - a form of Epilepsy.  She was a strong fighter and quickly was loved by her three sisters, grand parents, cousins, aunts and uncles, and all of the medical personnel who cared for her.  Her funeral was a special celebration of her short life that touched so many.  It is in these tragic challenges in life that we learn so much about who we are, why we are here and what lies ahead.  Gracyn's grandfather, my brother Tad Haney, gave a beautiful                                                        talk about the Plan of Salvation and the 

Hope of Eternal Families.  He shared his thoughts and lesson learned in the past 7 months from this special little girl.  
Life is so precious.  Our Father in Heaven knows each one of us and we can find peace and comfort through Him - who sent His Son to live and die so that we can live and return Home to Him.  



Gracyn Ruth Searle

We have had many opportunities for Service this month.
We helped with Spring clean-up of the flower beds at the
Mt. Timpanogos Temple.  It was an amazing experience along with the 
work project.  The Cornerstone that you can see in the picture has been covered by trees for the past 25 years.  They recently removed the trees and one again the cornerstone can be seen.  Anciently, the cornerstone was laid first and all other stones were placed off of it.  It literally held up to building.  Today it is place symbolically to show that the Temple is built on the foundation of Jesus Christ.  It is actually a hollow space that contains a time capsule that will be opened every 50 years.  This Temple is 26 years old so it will be a few years before it is opened.

I am the Humanitarian Specialist in my Ward.  I was asked to put together a project for the Sister's to do.  With the help of Stitching Hearts Worldwide - who donated the two quilt fabrics - I put them together and we were able to tie one quilt that evening.  Most Sisters enjoyed visiting together, but did not do much stitching!  I plan to finish the other quilt this next week over Spring Break.  The quilts will be going to Ukraine refugees through the Stitching Hearts organization.

SENIOR MISSIONARY REUNION
We had a very special week beginning on Monday with a luncheon with 15 Senior Missionary Couples who had served in the Alpine German Speaking Mission.  It was held at the Blue Boar Inn in Midway, Utah - a little bit of Alpine nostalgia .  We had a delightful time catching up with friends and enjoying a delicious lunch.

We ended the week at the 40th Anniversary of John and Carol Homer.  It was A PARTY!  We had so much fun just preparing for the party and then being with such wonderful people.  The invitation requested Formal attire.  It is not often that we get the opportunity to go out on the town all dressed up.  John and Carol supervised the Mission Office and were and continue to be leaders of our group.  They are adventurous, fun, kind, spiritual, examples of goodness and service, the life of the party and everything in between. Each one of their children shared memories and then we danced the night away. 








One more Mission Story - Another Service opportunity.  The Youth - ages 12-18 in our Church had a month devoted to Missionary Service.  They had activities all month that culminated in them receiving an invitation to dinner with families in the Ward.  We were asked to host a dinner representing the Mission we served in.  
We had two young men, Levi and Cameron who were assigned to our home.  It was a delightful evening sharing good food, stories and memories and getting to know them better.  We served the traditional Austrian dinner of Schnitzel, potatoes, spatzle, and bread.  Lindor truffles, Manner wafers and Nutella pastries finished off the dinner for dessert.

For those of you who know Russ very well you will know he has become a fair weather fan.  He cannot watch the games live - too much anxiety - but he really enjoys watching as soon as the game is over and he only watches if they won the game.  
This was a special event for alumni coaches and players to come together - the Navy vs. Royal - the two colors of the BYU team.
It was a beautiful crisp Spring night - just right for Football.  It was so fun being back in Cougar Stadium - so many memories.  
I was cheering for Navy and Russ was going for the Royal Team.  Navy led the whole game until the last two minutes.  Royal scored and let by 2.  With 8 seconds in the game - in BYU fashion a "Hale Mary" was thrown and Navy won.  Russ was good because either way - BYU won!




RECIPES:

CHICKEN SALAD

4 1/2 cups Cooked Chicken. (can use rotisserie, baked, boiled)
1 cup Celery, diced
1 cup Grapes, halved (I like to use red)
3 oz. Cream Cheese, softened
1 cup Mayonnaise 
1 Tbl. Lemon Juice
1 Tbl. Grey Poupon Mustard
1/2 tsp Pepper
1 tsp. Salt

Combine Chicken, celery and grapes in large bowl.  Set aside.
Mix remaining ingredients together until smooth.  Pour over chicken mixture.  Stir till combined.
Serve in lettuce leaf or in a croissant .  Keeps well for several days in the refrigerator.

FRUIT DRESSING

Bowl of your favorite fruit
strawberries, blackberries, raspberries, pineapple, kiwi, peaches, pears, melons, etc.

Mix together:
1/4 cup honey
1/4 cup orange juice
zest of 1 lemon

Pour over fruit to glaze
This is a light glaze over the fruit that gives it a great flavor.  Fruit does not sit in juice.

February 2022 A Year in Utah!

             FEBRUARY 2022

It is hard to believe it has been 1 year since we packed up 42 years of belongings on a nice Winter day in Arlington, TX and started our journey to Lindon, Utah.  The iconic Winter storm hit Texas just hours after the truck was loaded - a tender mercy - and the adventure began.  The truck sat in front of our Texas home for a whole week waiting for the weather to lift and the roads to be drivable.  We were blessed to get out of town and on to Wichita, Kansas.  Utah had a mild Winter and we had snow on the front lawn at our new home, but move-in day was a beautiful chilly February day.  One year later and it has been snowing for 24 hours and many inches.  I just finished shoveling the driveway so I could get out.  We don't have a snow blower yet, but if we get more than 2 snowstorms a year we will need to get one - that is hard work!

View from our front door looking out.  We had beautiful 50 degree days last week and we were able to get the fence railing built and installed for our walk-out front door.  What a difference a few days makes.  Winter is here and we really need the snowpack in the mountains.  





February is my Birthday month, Valentine's Day and the Birthday month for many family members and friends - a whole month of celebrating.  For many years a group of very special ladies who all had February birthdays would have lunch together.  I miss that annual event and especially those women who were such special friends.  Three of them are no longer living leaving special memories in my heart.

My Sister, Pam turned 75 Years in February.  Her girls planned a special day for her and I am so grateful to be living so close that Emily and I got to be a part of the celebration.  We had Brunch at Market Street Grill in Salt Lake City with her four daughters and her  2 best friends from her college days at the University of Utah.  It was such a fun time together celebrating the life of my wonderful sister.

A week later my two Sisters, Pam and Brooke, came and spent the weekend at our home.  It has been a long time since we have had a girls weekend.  A childhood friend passed away last week and her funeral just happened to be while they were here.  We attended the funeral on Saturday and it was certainly a walk down memory lane.  We saw friends we had not seen in many, many years - some over 40 years ago and it seemed like time had stopped and we were back in our childhood years of memories.  Another blessing of being in this area where many friends have ended up living in their later years.  We just need to get together more than just at funerals.  

We laughed, cried, shopped, ate delicious food and so enjoyed our time together.









I made cherry cheesecakes, chocolate caramel cheesecake and figgy pudding for dessert.  It was good we had a lot of people here this week so they could eat it all and not be around to tempt me to eat too much!

The Figgy Pudding recipe was given to me by my daughter-in-law and it is one of my new favorite desserts.  It reminds me so much of my mother and a date pudding she would make when I was growing up.

FIGGY PUDDING

1 1/2 cups chopped dried pitted dates
1/2 cup chopped dried figs
2 cups water
1 tsp. baking soda
7 Tbl. butter, softened
1 cup superfine sugar
2 eggs
            2 1/2 cups self-rising flour
            75 grams (2 1/2 oz.) dark chocolate, grated
            Butter for coating ramekins
            Ice cream or whipped cream, for garnish

Sauce:
2 cups brown sugar
2 cups heavy cream
7 oz. (14 Tbl.) butter

Directions:
Preheat oven to 350*
1.  Add the dates, figs and water to a medium saucepan and bring to a boil over medium heat.  Remove the pan from the heat and stir in the baking soda.  Let cool for about 5 minutes, then add to a blender and puree.
2.  Using a hand mixer, cream the butter and sugar in a large bowl.  Add the eggs and beat well.  Fold in the flour, the pureed date mixture and the chocolate.
3.  Put the mixture into 4 buttered, 1-cup individual ramekins, filling halfway.  (can use mini bundt pan as pictured above). Put in the oven and bake for 20-25 minutes.
4.  Prepare the sauce by stirring the sugar and cream in a medium saucepan over low heat.  Simmer until the sugar dissolves.  Raise the heat and bring to a boil, then reduce the heat and simmer for 5 minutes.  Add the butter and stir until incorporated.
5.  Remove the ramekins from the oven and let stand for 10 min.  May be served in the ramekin or unmolded onto a small serving plate.  With a paring knife cut a cross in the top of the puddings for the sauce.  
6.  Pour the sauce into the cross in the center of each pudding, then pour more sauce over the puddings and allow it to soak in slightly.  Top with fresh figs and vanilla ice cream or whipped cream.




For my Birthday, Russ and I decided to spend the day in Midway for a little Alpine nostalgia.  We started with lunch at our favorite Texas Roadhouse.  We then headed up the canyon to Midway.  We visited a few vintage shops, drove around the beautiful homes and resorts and ended at the Heber Valley Artisan Cheese Farm.  We tried some unique cheeses, bought and few and thought we would end with some ice cream from their ice cream shop.  It was actually Aggie Ice Cream from Utah State and we decided we would rather have BYU Creamery ice cream with the grandkids so we returned home to pick them up and continue the celebration.  It was a such a fun day in a beautiful place.  It certainly filled the bill for wanting a little Alpine memory.

We made rice krispie treats for the the lunch kids and they loved it.  One little boy got all excited and said, "I can't wait to eat this, I have never had a Rice Krispie Treat!"  Amazing how such a simple thing can bring happiness.  

We don't usually do dessert so it was a treat.  Breakfast continues to be one of the favorite lunches and I am getting really good at making pancakes.  We run an organized kitchen and I think some of the best school lunches around.
February has come and gone so quickly.  No travels this month, but lots of activities close to home.  We are feeling more settled every day and it is truly feeling like home here.  We hope if any of our friends have travel plans to this area you will come and visit us.  Our home is always open.


This month seems to be all about food.  We just finished another 6 week program with R3.  We are so grateful for our good health and being able to do what we enjoy doing.  Russ went to the Neurologist this week and all of his markers are normal and he does not need to return - just needs to keep regular visits with his Primary Care Doctor.  R3 is about eating more whole foods and less carbs and sugars.  I know the desserts above don't quite fit the description - that is real life every once in awhile!  Just wanted to share another new recipe that we enjoyed.

CHICKEN CRUST PIZZA

2 cans (7 oz. each) canned Chicken, drained
1 cup Parmesan Romano Cheese
2 eggs, beaten
1/2 pkg.  Dry Ranch Seasoning

Mix together above ingredients well.  
Line Pizza Pan with Parchment Paper
Spread mixture in pan.
Bake at 400* for 15-20 minutes.  
Cool for 5 min. and then flip onto pizza pan upside down.
Spread with pizza sauce, and favorite toppings. (olives, pepperoni, cheese, etc)
Bake additional 20 minutes.  
It is so good and you would never know it is made with chicken.  

We completed the month with a Vienna District Dinner on Sunday afternoon.  Oh how we love this group.  They asked for a German meal so I made schnitzel, spatzle (german noodles with cheese), potatoes, salad, homemade bread and Sacher Torte (Vienna’s special dessert).


Sacher Torte is a chocolate torte filled with apricot and topped with a chocolate ganache.

The cake is made with lots of eggs and stiff egg whites with good dark chocolate.  The cake is then cut in half to form two layers.  Top the bottom layer with Apricot jam.  I used the apricot jam I made in the Fall from local trees.

Then you top with second layer and coat the top and sides with more apricot jam.  

The top is European Dark Chocolate with butter that makes a wonderful ganache like topping.  
For the first time making this dessert it turned out great.  I have eaten it at several bakeries in Vienna and I liked how this cake was not as dry as those in the bakeries.  

Sacher Torte

We had a fun surprise on Monday this past week.  After the dinner on Sunday - when we thought we were meeting some of the significant others in their lives - Coopers cancelled at the last minute.  
Funny thing, our special friend from Freiburg, Germany - Elli texted me on Friday and said she wanted to come by and visit Friday or Saturday.  She just transferred to BYU from BYU-I in January and we had not seen her.  Unfortunately, this was the weekend I was with my Sisters and just could not find time to have her over.  I did not think I should invite her to come to the dinner with the mission group from Vienna since she did not know any of them.  So, I told her we would love to have her come on Monday.  She said, great and we set up a time.  Surprise!  She showed up on Monday with Cooper.  They met a few weeks ago and started dating.  They did not want to show up to the dinner together with everyone else before they told us.  Crazy.  We are happy for them and amazed at how two peoples paths cross when you least expect it.  Freiburg Germany is the common denominator - fun times!

So we come to the end of February and the end of our first year in Utah.  We have been studying in the Old Testament this week in Genesis about Jacob and his story of falling in love with Rachel and wanting to marry her.  He made the arrangement with her father that he would work for 7 years to be able to marry her.  As the story goes, her father had another daughter Leah who was the oldest daughter and he wanted to follow tradition and have her marry before the younger sister.  He deceived Jacob and Leah was the bride at the wedding.  He was heartbroken and a new arrangement was made.  He would need to stay with Leah and commit to 7 more years of labor and he could marry Rachel in a week.  He fulfilled his commitment.  After the first seven years Jacob said, "and they seemed unto him but a few days, for the love he had to her."  The past 4 years of our life have been like that for us.  How did so much happen and so much time gone by and it seems like days!  We have enjoyed and loved the journey and we are happy to be right where we are.

Our hearts are heavy as we hear the reports of the people in Ukraine and Russia.  Again, as we are studying about Abraham and his posterity we are very mindful that we are all God's children.  We are all descendants of Abraham, Isaac and Jacob.  They are significant to the Christian, Jewish and Muslim Worlds.  The question is asked, How can we, as Abrahams seed, bless "All the families of the earth?"
The one thing we can all do is PRAY for these people.  Many lives will never be the same and it is so hard seeing the destruction that is happening.  This is one of those "Abrahamic Tests" for these people and I know Heavenly Father is aware and mindful of them.  With our prayers, they will be sustained with courage, strength, willpower, comfort and peace amid the storm.  Our Humanitarian efforts will be helpful as well.  I hope that you will open your hearts and know that we are all beloved Sons and Daughters of a God who loves us and desires to us to follow Him.  We can overcome the evil in the World as we Follow Him.  In the next 30 days find a project or way to serve others.  If you need help finding a project you can check out JustServe.org.
